Mum's homemade muesli

Along with porridge, one of my favourite breakfasts is mum's homemade muesli with plenty of fresh fruit. It's so easy even hubby can make it!!

6 cups rolled oats

1 cup pumpkin seeds (pepitas)

1 cup sunflower seeds

1 cup flaked almonds (or any chopped nuts)

1/4 cup honey or maple syrup

1/4 cup oil e.g. macadamia oil, coconut oil*

1 cup dried fruit e.g. sultanas, cranberries, dried apricots, dates

Method:

  • Pre-heat oven to 160ÂșC.

  • In a large baking dish mix oats, pumpkin seeds, sunflower seeds & nuts together.

  • If honey is solid, gently heat until liquid.

  • Pour the oil and liquid honey over the dry ingredients and mix thoroughly.

  • Bake for 30mins, then take it out and stir, bake for another 20mins then stir. It's done when it's golden brown.

  • Leave to cool, then stir through the dried fruit.

  • Keep in an airtight container.

I like mine topped with fresh fruit like kiwifruit and berries and a splash of oat milk. While hubby enjoys layering natural yoghurt, then muesli and fruit on top - so feel free to make it your own!

*Macadamia oil is a neutral oil i.e. has very little flavour and it has a high smoke point so copes with the oven temperature just fine. Coconut oil would also work if you like the flavour :)
