Here's an easy, gluten-free, dairy-free delicious lemon cake to try. I thought it was going to be quite a heavy cake because it's made with almond meal instead of flour but no, it's very light and fluffy! Even hubby liked it and he's sometimes a bit funny with the texture of almond meal based things.
The best thing is it's all made in the blender - no extra bowls yay!
Tips:
If you're using a thermomix and want to grind whole almonds into almond meal remember to do that first.
It is quite a moist cake so if it's not going to get eaten within 3 days I would slice some and put it in the freezer. It freezes and defrosts well.
