Cranberry & Date Balls



Note to self: need to refrigerate for 2 hours before eating!!

Equipment: food processor

Ingredients:

1 cup raw almonds or almond meal

1 cup dessicated or flaked coconut

2/3 cup dried cranberries/sulphur free dried apricots/dried figs/sultanas

1/3 cup pitted dates

extra coconut, cacao powder or cinnamon for dusting (optional)

  • Place all ingredients into food processor or Thermomix and process until almonds are finely chopped and mixture starts sticking together. Add a tablespoon of water if needed for consistency.

  • Scoop out tablespoon amounts and roll into balls.

  • Roll balls in additional coconut, cacao powder or cinnamon (optional).

  • Refrigerate for at least 2 hours before eating.

  • Alternative/additional ingredients:

  • 1 tablespoon cacao powder plus a little water

  • nut-free version: use ground up

pumpkin seeds (pepitas) or sunflower seeds instead of almonds

  • 1/2 teaspoon cinnamon or other spices to taste
