Truly Tasty Tofu & Tempeh



Spices great for cooking tofu and tempeh

I've had a few questions lately about how I marinate my tofu and tempeh so here's my go to recipe...(i.e. oops I've forgotten to marinate it what can I do really quickly?!)

For 300g tempeh/tofu (2 portions):

1 tablespoon soy sauce/tamari

2 tablespoons oil (I use a neutral oil like macadamia oil)

2 tablespoons apple cider vinegar

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon paprika

  • Cut the tofu/tempeh into strips, cubes etc. I often cut mine into half thickness so it absorbs more marinade.

  • Place the cut tofu/tempeh into a baking dish and pour over the marinade. You can leave this to marinate in the fridge overnight or for a few hours, or you can even cook it straight away if you're little unorganised like me!

  • You can then bake, bbq, fry the tempeh/tofu, it's really versatile!

  • Cold tofu/tempeh is nice mixed through a salad for lunch the next day or just reheat any leftovers for dinner the next night.

Why do I marinate my own rather than buy the pre-marinated tofu/tempeh?

1. I'm allergic to garlic and often there is garlic in store bought marinades.

2. Often the marinades have colourings, flavourings, flavour enhancers, stabilisers, preservatives, sugar, excess salt and dodgy oil like GM canola oil.

There are HEAPS of other options to marinate tofu and tempeh e.g. chilli, turmeric, honey...so go forth and experiment and let me know what you come up with!
