Easy gluten-free muffin recipe

Hi everyone,
So this year seems to have started out crazier than last year! I hope you all had a wonderful Easter with family, friends or just chilling out and eating some delicious treats.

I finally got round to doing some baking and actually found a gluten-free muffin recipe that is pretty good so thought I should share it:
The things I like about the recipe are:
the use of an apple as well as the bananas for sweetness plus some maple syrup - I got away with 70g
oil instead of butter for people with a dairy intolerance
almond meal and chopped walnuts for added protein, minerals and fibre
cinnamon and nutmeg for flavour - although I reckon you could add more!
The authors mentioned they use a gluten-free flour with xanthan gum to help with the texture and binding things together. My flour didn't have xanthan gum so I used 1.5 teaspoons of psyllium husk instead and that worked well. You could of course use normal flour - I think wholemeal would be nice in this recipe.
The recipe is based on a thermomix but if you have a food processor or are used to baking I'm sure you can easily convert it. Might be a good one to get the kids help with in the school holidays!
