Oaty goodness in a bar

Hi everyone,

Today I'm sharing a great oat bar recipe that is very simple to make, delicious and very filling - for those times when you need a decent snack...most days for me! I haven't yet found a muesli bar in the supermarket that is Carla Approved. They either have sugar, glucose, flavourings, humectant, maltodextrin, oils or emulsifiers just to name a few!

I love a homemade flapjack but usually they have a lot of butter and sugar in them. This recipe still has a decent amount of fat in it but uses peanut butter or almond butter instead - a better type of fat (monounsaturated) for the heart and blood vessels, plus mashed banana which lowers the amount of fat needed. Maple syrup is used instead of sugar so there are no refined ingredients in them at all.

As you've probably gathered I often change recipes when I make them (blame my mum for those genes!) With this one, I leave out the salt and add chopped dried apricots - although any dried fruit would work.

Happy snacking (and recipe adjusting!),

Carla :)
