Wow what a beautiful weekend of sunshine we've had, I hope you've all been able to absorb some!
Today's email is a recipe that is both Carla approved and Hubby approved so hopefully it will appeal to vegetarians and omnivores alike.
I wanted to make some stuffed capsicums so found a recipe online, realised I didn't have half the ingredients so bastardised it into a new version that worked a treat!
They can be used as a complete meal since they contain beans, rice and vegetables or they can be used as a side dish along with something else - even meat! You can adapt it with whatever vegetables you have and can remove the chilli if need be but I think it was a nice addition.
I had some whoppers of red capsicums so cut them in half but you can also just cut the tops off. There will probably be some rice mixture left over which is nice warm or cold the next day.
