Keeping breakfast simple

Hi everyone,


Although you wouldn't know if from the past couple of days (we've lit the fire again!), the weather is gradually warming up and I've shifted from a hot breakfast of porridge to a fruit and cereal breakfast most days.  Now of course you don't have to eat cereal and I don't even walk down the cereal aisle of the supermarket as it's so full of added sugar, flavourings, salt, colourings and maltodextrin just to name a few.  So what to do?  Either spend a lot of money on a healthier option or make your own.  Here is a really simple recipe that even the kids can put together.  It's gluten-free and you can mix it up with your preferred nuts and dried fruit.  The cinnamon adds a really nice flavour but if it's not your thing just leave it out, likewise with the coconut.


Serve it with plenty of fresh fruit and your preference of milk, plant-based milk or yoghurt.  You can even serve with fresh homemade orange or apple juice.  If you are having dairy choose unhomogenised, organic milk and organic, unsweetened yoghurt where possible.  


Add one tablespoon of flaxseed (linseed) meal or LSA (linseed, sunflower, almond meal) for more omega-3 fatty acids.


And of course, if it's warm enough eat it outside for a great start to the day.
