Along with porridge, one of my favourite breakfasts is mum's homemade muesli with plenty of fresh fruit. It's so easy even hubby can make it!!
6 cups rolled oats
1 cup pumpkin seeds (pepitas)
1 cup sunflower seeds
1 cup flaked almonds (or any chopped nuts)
1/4 cup honey or maple syrup
1/4 cup oil e.g. macadamia oil, coconut oil*
1 cup dried fruit e.g. sultanas, cranberries, dried apricots, dates
Method:
Pre-heat oven to 160ºC.
In a large baking dish mix oats, pumpkin seeds, sunflower seeds & nuts together.
If honey is solid, gently heat until liquid.
Pour the oil and liquid honey over the dry ingredients and mix thoroughly.
Bake for 30mins, then take it out and stir, bake for another 20mins then stir. It's done when it's golden brown.
Leave to cool, then stir through the dried fruit.
Keep in an airtight container.
I like mine topped with fresh fruit like kiwifruit and berries and a splash of oat milk. While hubby enjoys layering natural yoghurt, then muesli and fruit on top - so feel free to make it your own!
*Macadamia oil is a neutral oil i.e. has very little flavour and it has a high smoke point so copes with the oven temperature just fine. Coconut oil would also work if you like the flavour :)
